GETTING TO KNOW YOU DINNER Your adult daughter was recently engaged. You have met your future son-in-law’s parents a few times, but have not really spent any quality time with them. You and your daughter come up with the idea of having a dinner at your house and giving everyone an opportunity to become better acquainted and more comfortable with one another. A date is set, people are excited, and of course, it is up to you to prepare the meal. You decide to prepare your favorite meal from your childhood, Mom’s delicious Sunday chicken dinner. Here is what you need: 10 pound whole chicken Box of Chicken Stuffing 10 medium size red potatoes Can of white shoepeg corn Head of red leaf lettuce Head of regular lettuce Bag of Cherry Tomatoes Pre-heat your oven at 350 degrees. I prepare the chicken by taking all the “stuff “ out of the cavity, throwing it away, and running cold water over and in the chicken, then thoroughly draining it. Place the chicken in a big cooking dish and surround it with the potatoes. Season with salt, pepper, paprika, butter and a touch of garlic. Prepare the stuffing per the instructions given to you on the box, then gently stuff the chicken cavity. Place in the oven and cook for twenty minutes per pound. Check occasionally and continue to baste the chicken with butter. When done, set outside for about 20 minutes before carving. Pour the liquid from the dish into a small bowl – great gravy! Break up lettuce leafs and place in a big salad bowl with ice cold water. Sit for 15 minutes. When ready to serve, drain the water, add the tomatoes, cutting each one in half. Use your favorite salad dressing, preferably organic. Serve in individual salad bowls. Steam the corn in a small pot at medium heat shortly before the meal is ready to serve. Stir frequently until hot. Serve. Have your favorite wine – a nice German Riesling or a quality Pinot Grigio would be perfect. Your favorite bread or bun would complement the meal as well.
